We made it. It’s Friday. This week flew by. In sort of an impatient crap-it’s-already-Wednesday-I-have-so-much-stuff-to-do kind of way. As you are reading this, I am hopefully flying through the air on my way to sunny San Diego to visit my college roommate. We will eat fish tacos and stroll on the beach and for our Friday Driveway Drinks, instead of a driveway we will drink cold rosé on her patio that overlooks the Pacific. It’s gonna be dreamy.
I was inspired by my trip this weekend to make this summery Salted Grapefuit Paloma. I came across a recipe on Food & Wine’s Instagram for a salted simple syrup and instantly I was planning different drinks that we could invent with this sweet and salty combo. Obviously tequila is the first stop. This Paloma has fresh squeezed grapefruit juice, Añejo tequila, and some of the salted simple syrup that softens the bitterness of the grapefruit but also makes you quench more of the drink. Dangerous territory right here.
Enjoy this drink of those days where the humidity tells you it’s summer but the calendar says it’s still Spring. When you wish you were sipping drinks on a patio overlooking the ocean, but you’re still in your backyard in the Midwest.
Salted Grapefruit Paloma
Makes one cocktail, multiply as needed
1 oz salted simple syrup (recipe below)
1.5 oz Añejo tequila
3 oz fresh squeezed grapefruit juice
salt for rim
zest of half a grapefruit
1/4 C coarse salt
grapefruit slices to garnish

2 C superfine sugar
1 C water
1/4 C sea salt
Combine sugar, water and salt in saucepan set over medium heat. Stir to dissolve and let come to a boil. Strain through fine-mesh strainer and let cool. Store in glass jar in refrigerator for up to two weeks.
Combine grapefruit zest and coarse salt on small plate. Rub piece of grapefruit around rim of lowball glass, and turn upside down onto plate to rim with salt and zest mixture.
Fill glass with clear ice. Pour in 1 oz of simple syrup, 3 oz grapefruit juice, and 1.5 oz of Añejo tequila. Stir to combine. Garnish with slice of grapefuit and enjoy! It’s Friday!!
